These gluten-free zucchini fritters are crispy on the outside and tender on the inside. Easy to make, they’re perfect as a side dish, appetizer, or light meal.

This recipe is made with our Cannelle gluten-free all-purpose flour, perfect for binding without making the fritters heavy.

2 medium zucchini, grated
1/2 onion, grated

100 g Cannelle Boulangerie gluten-free all-purpose flour
2 eggs
Seasoning
1/2 tsp salt

INSTRUCTIONS
1. Prepare the zucchini
Grate the zucchini and squeeze out as much moisture as possible using a clean towel.
2. Mix the ingredients
In a bowl, combine zucchini, onion, Cannelle gluten-free all-purpose flour, eggs, salt, and pepper.
Mix until well combined.
3. Heat the pan
Heat oil in a skillet over medium heat.
4. Form the fritters
Scoop portions into the pan and flatten slightly.
5. Cook
Cook for 4–5 minutes per side, until golden brown.
6. Drain
Place on paper towels.
7. Serve
Serve warm with a sauce or fresh salad.
