Making a homemade gluten-free pizza is simpler than you think. This dough is flexible, easy to spread, and yields a slightly crispy yet still soft crust.
This recipe is prepared with our Cannelle Boulangerie gluten-free all-purpose flour and our baking powder.

INGREDIENTS
For the starter
12.5 g baking powder
7.5 g sugar
7.5 g Cannelle Boulangerie gluten-free flour
For the dough
250 g Cannelle Boulangerie gluten-free flour
6.25 g salt
17.5 ml vegetable oil
150 ml warm water
For the topping
Tomato sauce
Grated cheese
Tomatoes, onions, peppers or toppings of your choice

PREPARATION
1. Prepare the starter
Turn on the oven light to create a warm environment (about 45°C). In a bowl, mix the yeast, sugar, and flour with a little warm water. Add more water if necessary and let rest until the mixture becomes frothy.
2. Prepare the dough
In another bowl, mix the flour, salt, and vegetable oil. Add the starter then the warm water.
3. Mix
Using a spatula, mix until you get a fairly moist dough.
4. Shape the dough
Place the dough on a baking sheet lined with parchment paper and spread it to form the pizza base.
5. Let rest
Cover the dough with a slightly damp cloth and let rest for about 15 minutes in a warm place.
6. First bake
Pre-bake the dough in the oven for 10 minutes.
7. Garnish the pizza
Remove the dough from the oven, add tomato sauce, cheese, and your chosen toppings.
8. Final bake
Return the pizza to the oven for a few minutes to melt and brown the cheese.
9. Serve
Remove from the oven, slice, and enjoy.

- For a crispier crust, pre-bake the dough a few minutes longer before adding the toppings.
- Lightly moisten your spatula or hands to handle gluten-free dough more easily.
- Add a drizzle of olive oil to the dough before baking for even more flavor.
