This crustless ham and mushroom quiche is a simple and delicious alternative to a traditional quiche. It offers a soft, custardy texture with a lightly golden top, while staying lighter without a crust.

Perfect for a quick meal, it combines savory ham, tender mushrooms, and melted cheese for a comforting and balanced dish.

This recipe is made with our Cannelle gluten-free all-purpose flour.

INGREDIENTS

100 g Cannelle gluten-free all-purpose flour
500 ml milk
3 eggs

100 g diced ham
100 g sliced mushrooms
120 g shredded cheese (mild cheddar or Swiss recommended)

INSTRUCTIONS

1. Preheat the oven
Preheat the oven to 400°F (200°C).

2. Cook the mushrooms
In a pan, sauté the mushrooms until they release their moisture and become lightly golden.

3. Add the ham
Add the diced ham and cook for 1–2 minutes.

4. Prepare the batter
In a large bowl, mix the eggs, Cannelle gluten-free all-purpose flour, and milk.
Season with salt and pepper, then whisk until smooth.

5. Assemble the quiche
Grease a pie dish (or use a silicone mold).
Spread the ham and mushrooms evenly in the bottom, then add the shredded cheese.

Pour the batter over the filling.

6. Bake
Bake for 45 minutes, until the quiche is set and lightly golden.

7. Serve
Remove from the oven and let rest for 5 to 10 minutes before serving.
