These quinoa, sweet potato and squash patties are a healthy, flavorful and satisfying option. Crispy on the outside and soft on the inside, they combine simple ingredients for a balanced and comforting dish.

INGREDIENTS
Base
1 cup cooked quinoa
1 cup grated sweet potato
1 cup grated squash (butternut or similar)
Binder
2 eggs
3 tbsp Cannelle gluten-free all-purpose flour
Seasoning
1 small onion, finely chopped
1 garlic clove, minced
salt and pepper
spices of choice (paprika, cumin or herbs)

INSTRUCTIONS
1. Cook the quinoa
Cook the quinoa according to package instructions, then let it cool slightly.
2. Prepare the vegetables
Grate the sweet potato and squash. Finely chop the onion and garlic.
3. Mix the ingredients
In a large bowl, combine the quinoa, grated vegetables, eggs, and Cannelle gluten-free all-purpose flour.
Add seasoning and mix until well combined.
4. Shape the patties
Form patties with your hands and place them on a plate or tray.
5. Cook
In a pan with a little oil, cook the patties for 4–5 minutes per side, until golden and crispy.
6. Serve
Serve warm with a yogurt-based sauce or a fresh salad.
